125g Tomato Puree
30g Chopped Spinach
3 - 4 Chopped Garlic Cloves
2 Tablespoons Olive oil
(To taste) Salt
(To taste) Pepper
(For garnish)  Parmesan Cheese

This spinach and penne pasta is a quick and tasty dinner to put together.

Pasta is such a versatile dish; one can have it for breakfast or as an evening snack or a meal.

You can serve it as a main course or pair it with soup for a light and fulfilling meal.

It’s easy to make and you can add any flavor or ingredients, most vegetables or whatever takes your fancy.

Note: Although this dish serves 2, the nutritional information is per 1 serving.

Get all your ingredients ready.

Boil 4 cups of water, add pasta to boiling water.

Add 1/2 tablespoon salt and let it cook for 15-20 minutes or until cooked.

Turn off the heat and drain off the excess water.

Blanch the spinach by adding it to boiling water for 5 minutes and draining the water from it.

Heat oil in a pan.
Add garlic and sauté for 5 minutes.

Stir in the tomato puree and sauté for 5 minutes.

Add in the salt, pepper and blanched spinach, then sauté for 5 minutes.

Add the cooked pasta and mix well, then cook for a further 5 minutes.

Turn off the heat, tranfer it to a plate and garnish with grated parmesan cheese.

Serve while still hot to warm.
