These stuffed pitta pockets with a tasty nutritious filling make a lovely change from ordinary sandwiches.

These stuffed pitta pockets with a tasty nutritious filling make a lovely change from ordinary sandwiches.

 

To save you some time when you are ready to make these, you can knock the filling up in the morning or even the night before you intend making them, but keep it in an airtight container until ready to use.

Gather your ingredients

Mix the tuna and the mayo together and add the pepper to taste.
Then stir in the sweetcorn.

Cut the pitta into 2 halves and grill them for about 2 mins until warm.

Stuff the pittas with the tuna and sweetcorn mixture and serve while still warm.

Quick tip:
If you feel the pittas may be a bit dry to eat.
Before you fill them you can lightly coat the inside with your favourite low fat spread or some olive oil.
