Ingredients

500 grams Boneless Chicken Breast Cut roughly into 1 inch cubes
150 grams Broccoli Seperated into small florets
1 Large Onion Roughly chopped
1 Tablespoon Coconut Oil
1 tspn Sesame Seeds For garnishing
For Sauce
100ml Low Sodium Chicken Stock
1 Tablespoon Low Sodium Soy Sauce
1 tspn Ground Ginger
1 tspn Garlic Powder
2 tspns Clear Honey
1/2 tspn Chilli Flakes

Not only is this chicken and broccoli stir fry a delicious tasting dish, it also has the benefit of being a really good source of protein, fiber, vitamins and minerals.

This dish is quite nice and filling to eat on its own, alternatively you can have it with a light vegetable rice or side dish of your choosing.

If you are watching those calories, you can reduce them a bit more just by having less sauce with your dish.

Heat 1/2 tablespoon coconut oil in a large frying pan over medium-high heat.

Add the pieces of chicken breasts, and cook for about 5 to 10 minutes, stirring occasionally, until the chicken is partially browned and mostly cooked through.

While the chicken is cooking, mix all your sauce ingredients together and put to one side.

Once the chicken is partialy browned, add the remaining 1/2 tablespoon of coconut oil, broccoli and chopped onion and stir to combine.

Continue cooking for about another 3 to 5 minutes, until the broccoli is bright green and the onions are soft. Stir in the sauce mixture, and cook for an additional 5 minutes until the sauce has reduced by half.

Remove from the heat, pour into a bowl and garnish with toasted sesame seeds.
